A quick salad I threw together for dinner tonight.
Broccoli Asparagus Salad with Lemon Vinaigrette
1-2 cups broccoli, chopped
20-25 asparagus stalks, chopped to 1" pieces
1 small zucchini, sliced and quartered
1/4 onion, diced
1/8 cup (2 TBS) chopped parsley
1/4 cup sprouts
1/4 cup lemon juice (of one whole lemon)
1/4 cup olive oil
2-3 TBS apple cider vinegar
1 clove garlic, pressed or minced
salt and pepper to taste
Toss first six ingredients. Wisk together the vinaigrette. Toss with vegetables. Delicious.
PS. I think he WAS complaining. :-P
