Breakfast

Pumpkin pancakes made with leftover pumpkin. Saving eggs for later, so we made a vegan version

Coffee leftover from last night.

Not pictured: smoothie made with 1/2 carrot, 1 handful spinach, 1/4 cup blueberries, 1 banana, 4 dates and 1 scoop of enriching greens.  

Still have the rest of that pumpkin to bake and cook into something delicious!

  1. Today I'm making my pie pumpkin into puree so I can make a pie for thanksgiving! Also using the pumpkin for pumpkin rolls, http://www.990square.com/2011/11/pumpkin-yeast-bread/, and my friend Darlene is coming over to make pumpkin whoopie pies today!! :)

  3. I thought it looked pretty before you said something, Ryan, but now all I can see is it being mad at me for cooking it! Ha!

    Eileen, I had eyed up those pumpkin rolls last week. I may have to give them a try!
